Artisanal Kacchi Kairi Achaar / Raw Mango Pickle made in small batches from handpicked seasonal green mangoes. Sunlight is a key ingredient.
After a thorough inspection, mangoes are cut and left in the sun to dehydrate. Ready mangoes are then rubbed with ground spices and pure mustard oil. Later to be placed in a glass jar and kept in the sun for several days to mature.
Natural preservation enhances the flavors and the longevity of the pickles.
